Applications: pastry, ice creams,
confectionery, chocolates, etc.
Properties: purest form of glucose, less
sweet than sugar, prevents crystallisation,
promotes fermentation, adds softness and
colour when cooked.
Quantity: 2 to 5% of the total weight.
